DARing to cook
These ladies were young, “Junior” members of the Lafayette-Lexington Chapter of the DAR when “Missouri Juniors DARing to Cook Book!” was published about 50 years ago. In honor of America’s 250th, each week leading up to July 4 we will publish one of their recipes and one of the quotes sprinkled among the pages of the book. Enjoy! ——— CAESAR SALAD
Kathi Skelton, Lafayette-Lexington Chapter DAR 1 large head romaine lettuce ¼ c. Parmesan cheese ¼ c. blue cheese ¾ tsp. salt ¼ tsp. black pepper Juice of 2 lemons 1 garlic clove ¼ c. oil ½ c. oil 1 Tablespoon Worcestershire sauce 1 egg 2 c. bread cubes Wash and drain lettuce. Tear into pieces. Marinate 1 garlic clove in ¼ cup oil all day. Place greens in bowl and sprinkle with Parmesan and blue cheese. Combine ½ cup oil with salt, Worcestershire sauce and pepper. Drizzle on greens and cheese. Toss until leaves glisten. Combine egg and lemon juice – add to greens and toss well. Pour garlic and oil marinade over two cups bread cubes. Give a quick toss and sprinkle on greens. Toss once more.
