DARing to cook
These ladies were young, “Junior” members of the Lafayette-Lexington Chapter of the DAR when “Missouri Juniors DARing to Cook Book!” was published about 50 years ago. In honor of America’s 250th, each week leading up to July 4 we will publish one of their recipes and one of the quotes sprinkled among the pages of the book. Enjoy! ——— BEEF SUPPER
Kathi Skelton, Lafayette-Lexington Chapter DAR 2 lb. beef, cut into cubes, salt and pepper beef 1 (4 ½ oz.) can mushrooms 1 can cream of mushroom soup ¾ c. sour cream 2 c. shredded Cheddar cheese (8 oz.) 2 onions, sliced 2 Tablespoons oil 4 medium potatoes, pared, sliced ¾ c. milk 1 tsp. salt ¼ tsp. pepper Season meat with salt and pepper; brown with onion in oil. Pour off oil. Drain mushrooms reserving liquid. Add water to liquid to make one cup. Stir mushrooms and liquid into meat. Heat to boiling; reduce heat. Cover and simmer 2 hours. Heat oven to 350⁰. Pour meat mixture into dish. Arrange potatoes over meat. Mix remaining ingredients and pour over potatoes. Sprinkle with cheese or mix in. Bake uncovered 1 hour 20 minutes or until potatoes are done.
