DARing to cook
These ladies were young, “Junior” members of the Lafayette-Lexington Chapter of the DAR when “Missouri Juniors DARing to Cook Book!” was published about 50 years ago. In honor of America’s 250th, each week leading up to July 4 we will publish one of their recipes and one of the quotes sprinkled among the pages of the book. Enjoy! ——— 24 HOUR SANDWICHES
Elizabeth Ellis, Lafayette-Lexington Chapter DAR 2 cans tuna, drained ½ c. chopped fine celery 2/3 c. salad dressing ½ c. butter ½ c. chopped ripe olives 4 hard boiled eggs, finely chopped 2 small glasses Old English sharp cheese 2 raw eggs Mix tuna, celery, olives, hard boiled eggs and salad dressing together well for filling.
Frosting – Mix cheese, butter and raw eggs well in beater. Cut slices of bread rounds with any size tin can (choose size you want.) It takes 3 slices for each sandwich. Fill slices with filling generously – stacking slices and holding with toothpick. Leave top slice free of filling. Place on ungreased cookie sheet. Frost top and side of sandwiches with frosting. Store uncovered in refrigerator 30 minutes until frosting sets up. Then cover with foil and let chill for 24 hours. Bake 10 minutes at 450⁰ when ready to serve. Serve at once. Quote:
